I'm on a quest to eat healthy and pass what I find along to you. Here's what was for my dinner tonight!
Salad:
5 oz baby greens
1/2 cup fresh or frozen corn
1/2 cup dark beans such as kidney or black beans
1 fresh tomato diced
1 gluten free breaded chicken tender cut in small slices (optional)
(Heat beans and corn in sauce pan over medium heat. Cook chicken tender per directions. Layer salad starting with greens. Add tomato, beans and corn, and dressing and top with chicken cuts.)
Dressing:
1 cup plain Greek yogurt
3 tbsp chopped green onions
1 clove fresh garlic
1 1/2 tbsp lime juice
1 tsp ground cummin
1 tsp chili powder
1/4 tsp salt
(Combine all dressing ingredients in small blender and blend until semi-smooth. Use 4 tbsp to top salad.)
Enjoy!
