Turkey and Egg Burrito

I did WHAT with my leftover Thanksgiving turkey? Oh yes I did. I made it into a delicious burrito! Ok, I admit, I've been on a bit of a burrito kick lately, but when you taste this bad boy, you'll see why!

The insides:
Leftover turkey from Thanksgiving (or just get some turkey breasts and cook them up in a frying pan)
2 eggs
1 tbsp milk (I prefer coconut milk)
1 tsp extra virgin olive oil
Seasoning to taste

The toppings: (go nuts!)
2 tbsp sour cream (optional)
1 tbsp sliced black olives (optional)
6-8 slices of picked jalapeno (optional)
2 tbsp cheddar cheese (optional)
2 tbsp diced tomatoes (optional)
And... Whatever else you like on your burrito

Cut turkey into small pieces and place in a small frying pan. Add eggs, milk, extra virgin olive oil and seasoning and scramble over medium heat until thoroughly cooked. Place cooked egg scramble down the center of your favorite type of tortilla shell. Top with your favorite toppings. Enjoy!
